STORY: Twelve Triangles adapts plans and opens new food store

Edinburgh bakery Twelve Triangles has opened a new food store offering a variety of baked goods, homemade takeaway dishes and fresh produce from trusted suppliers, as well as soft serve ice cream.

Founded by Rachel Morgan and Emily Cuddeford, Twelve Triangles has a loyal following in Edinburgh with four other bakeries across the city. The new Easter Road store was originally envisaged as a restaurant, but the Coronavirus enlightened the team to what format customers really wanted.

Now the store has opened with an emphasis on top-notch produce for people to cook at home or prepared salads, sandwiches and pies, alongside the famed Twelve Triangles sourdough, cakes and pastries. Shelves are lined with fresh meats, charcuterie and cheeses from Leith’s East Coast Cured, organic vegetables from East Lothian’s Phantassie Farm and honey from The Edinburgh Honey Company, as well as jams, pickles and ketchups made by the Twelve Triangles team. Soft serve ice cream made with organic milk from Mossgiel Farm.

Coffees and takeaway dishes are served through a special hatch onto the street, with affogato (soft serve ice cream topped with a shot of espresso coffee) already proving popular.

The open-plan kitchen is headed up by Joe Haworth, who has worked alongside Skye Gyngell at Somerset House’s Spring. Joe is developing dishes for the store as well as seasonal popup dinners to be served through the street hatch. These will include curries served with homemade chutneys, salads and rotis. Fresh made-from-scratch pasta and gnocchi with a rich oxtail ragu; simple pestos; or the likes of pumpkin with parmesan. Pies will also be a regular feature with a classic mini pork pie available daily and weekly changing vegetable and meat varieties: from pumpkin, feta and tomato to braised goat, mint, oregano and preserved lemon. On the bakery side Connor Stewart, who has moved from Twelve Triangle’s Leith bakery, will be developing a range of pastries, cakes and cookies specifically for the new site.

The Easter Road store is close to Montgomery Street Park as well Holyrood Park, home to the famous Arthurs Seat and Salisbury Crags. The location makes the store ideal for picnic provisions.

Emily Cuddeford said: “Our Easter Road site was originally planned as a restaurant but times have changed and we’re delighted with our new food store. We’re still able to use the large kitchen and the expertise of our chefs, Joe and Connnor we’re placed at the heart of burgeoning food and drink scene in this part of the city. While really good baking remains at the heart of Twelve Triangles, this new store celebrates our love of an even greater range of wonderful food. There’s a real joy to this project as we’re able to explore new flavours, techniques and dishes whilst celebrating the local producers we treasure.”

Located at 22-24 Easter Road, the 560sq/ft store will be open will be open from 8.30am to 6pm Wednesday to Sunday. Twelve Triangles launched a home delivery service across Edinburgh during the lockdown period, primarily using bicycle couriers and this service is still available.
