Henllan Bakery Crowned National Bakery of the Year 2025

The 2024 Welsh Regional Winner has now gone one step further, scooping the much-coveted National Bakery of the Year 2025. Henllan Bakery in Denbigh, North Wales—founded in 1908 and now led by fifth-generation baker Tom Moore—continues to cement its reputation as one of Wales’s most respected family-run bakery institutions.

Although Tom was unable to attend the ceremony, the award was proudly accepted on his behalf by his long-standing right-hand man, Elisha Francis, Operations Manager and former apprentice. Elisha has worked alongside Tom for many years and is deeply involved in the bakery’s growth and development.

Speaking on the win, Elisha said: “The business has grown a lot over the past few years, and it's just nice to be recognised for that. There’s a lot of hard work that goes on behind the scenes… we’ve been working really hard on growing the business. It’s nice to be recognised for that.”

That growth has included major reinvestment and an expanded footprint across Wales. “There has been a lot of reinvestment back into the business,” Elisha explained. “Over the past few years, we've grown down into South Wales… we've got our own depot down there now, so we distribute all over the South and do a lot more wholesale. We actually came down early today because our bread is being served in Sandwich Sandwich in London—so we came to get a sandwich with our own bread. That was nice.”

Henllan’s future plans are equally ambitious. “We have some big plans over the next few years, just looking to grow the business as much as we can,” he said. “We’ve got new NPD facilities going in next month, where we can develop more products but also train our next-generation bakers. We try to take on six apprentices every year, so this will be a development centre for them, where we can bring in our suppliers to train them as well.”

For Elisha, this national win marks a major milestone. “Winning the regional award last year was great, but it’s even better to win the overall National Bakery of the Year award.”
