Williams upgrades Crystal range to make life easier for bakers

The latest Crystal range of products from Williams Refrigeration is designed to support the busy demands of modern bakeries, helping teams achieve consistent, high-quality dough results  with ease.  The range features reach-in retarders, provers, freezers and dough retarder provers (DRPs), which can be programmed to suit the specific requirements of both bread and pastry production. 

Reengineered with the user in mind, the range offers even more intuitive controls alongside highly accurate temperature and humidity control. Meanwhile their energy efficient operation helps to reduce running costs and lowers their carbon footprint.

All Crystal products are available in one- and two-door formats and run on natural refrigerant, which not only enhances their energy efficiency but also makes them a sustainable choice.

Designed to make the baker’s life easier, the DRPs feature the DoughMaster 5 touchscreen controller, which offers an intuitive menu system for easy programme selection. Users can also customise the controller and create bespoke programmes to suit their needs.  A large, built-in image library can be assigned to each cycle, allowing quick and easy identification of recipes.

Retarder prover functionality also enables dough to be held overnight or over the weekend, helping bakeries plan production ahead, manage production bottlenecks and reduce labour costs.

 The Crystal’s Doughmaster controller ensures precise humidity and temperature control throughout the retarding and proving processes, preventing issues such as the skinning of dough and creating the ideal conditions for it to rise. Dedicated programs are available for both bread and pastry applications, ensuring the correct environment for each product type.

The enhanced energy efficiency has enabled Williams’ engineering team to significantly reduce power load to such an extent that even the two door DRP runs off a standard 13 amp supply. This makes installation simpler, allowing Crystal models to be easily integrated into existing bakeries and kitchens in a diverse range of businesses.

This updated technology combines performance with a sleek, modern look, including a full length, integral handle. This improves usability while also supporting hygiene by making the units easier to clean.
